We did it again, nothing much!

Where are we today ?
      What did we do? Nothing much, kinda like the movie "Ground Hog Day" an almost carbon copy of yesterday.
      Just hung out here and enjoyed this great resort. Walkabouts, chat with a few people here and there, a nice light lunch, read for a while with this amazing weather, 30 minutes in the gym.
      Suzie sorted some of our books to give away, ones we can download free. Lighten the load in our coach.
       Last  night we enjoyed a late "Social Hour" with Jim and Judy, a couple we met in Arizona, got home too late to post these pictures. Not used to being out after dark,(must be getting old!)

      This afternoon we can chat and read some more, then whip up supper on our Weber Q.
 I prepared a couple small slabs of pork ribs in a foil pan, sauerkraut and 1/4 cup water on the bottom, garlic spice, sauerkraut between the ribs and on top.

          Wrap with foil on the Q about 60 minutes or so, on low.  Added the corn I had soaked in water for about an hour for about 20 minutes on the Q turning a couple times, and a Jalapeño pepper I had stuffed with cream cheese (just for me!). Slathered some BBQ sauce with brown sugar added to make the ribs sweet and sticky, fall off the bone tender. You can check out this on my recipe blog too, click HERE
      Then added that to a small salad with fresh local strawberries and had a feast.

       That was our regular day taking it easy, because we have a very busy day tomorrow, and a bit on Sunday before we leave this park and move on down the road a bit.
       Glad you could drop by for a peek again, we are enjoying this very nice  summer weather.

  2. I've been doing ribs in a smoker at home and appreciate your recipe. I'll have to try that when we are on the road with the RV.

  3. Love your friends shirt...Eat Chocolate, Live Longer. Only if that were true I would live to be 300 years old.

  7. Oh George...reminds me I need to get some sauerkraut. Reading more and more how it makes our gut happy!!! Add a stuffed pepper, bet it was really singing :)
